			<content:encoded><![CDATA[<p><strong>When you&#8217;re on a low carb diet</strong>, for some of us, it can be very, very hard to overcome the idea that you can&#8217;t cram down cake, cookies, and pie anymore. I don&#8217;t know about you, but I used to ALWAYS make sure I had several different desserts on hand that I could munch on throughout the day and night.</p>
<p>Anyway, since I began a low carb lifestyle, I quickly found out what I could do for dessert/sweet tooth options. There isn&#8217;t a broad range of desserts out there that are low carb friendly, but I have one in particular that I&#8217;m surprised more low carb dieters don&#8217;t know about.</p>

<p>I have two words for this low carb dessert&#8230;.simply amazing.</p>
<p>Honestly, I don&#8217;t think I could survive the low carb Atkins lifestyle without it. Sure, there are a variety of sweet low carb bars, shakes, etc&#8230;but nothing compares to dishing out a HUGE bowl of sugar free strawberry jello topped with copius amounts of heavy whipped cream. YUMMY! And seriously, go crazy with it. You could make a meal out of it if you want (though, it&#8217;s not as filling as a steak), but it absolutely WILL crush your sweet tooth cravings.</p>
<p><strong>Here is a quick recipe for making real whipped cream if you don&#8217;t have one handy:</strong></p>
<p><strong>Ingridients</strong><br />
14 oz. chilled heavy whipping cream<br />
2 Tbsp. Splenda® (or to taste)<br />
1 tsp. vanilla extract</p>
<p><strong>Instructions</strong><br />
Whip the hell out of it.<br />
Chill</p>
