Low Carb Recipe – Fried Fish with Pork Rind

Ingredients:
2 tilapia (cod, scrod, or sole will also work) fillets
2/4 bag baked pork rinds
1 tbsp bacon bits
1 tbsp parmaesan or romano cheese
1 tbsp onion flakes
1 tsp garlic powder
salt and pepper to taste
1 tsp old bay seasoning
1 tsp cayenne or chili pepper
6 slices garlic and herb cheese (fried crispy)
2 eggs
enough equal parts olive oil and butter to fill pan 1 cm
How to Prepare:
Blend 3/4 bag of pork rinds, onion flakes, parmaesan or romano cheese, bacon bits, garlic powder or chopped garlic, salt, pepper, old bay, cayenne or chili powder, and crushed fried garlic and herb cheddar cheese in a food processor until you have a fine powder. Dip tilapia fish (my favorite, but cod, sole, or scrod works just as well) fillets in an egg wash (beaten eggs) and then coat thoroughly with “breading.” fry in a large iron frying pan in olive oil and butter (about 1 cm deep) until golden brown. This “breading” tastes much better than bread crumbs.

That fish recipes seems real good, however I think I will leave out the Pork Rind. I don’t like them and don’t see how people can eat those things. I don’t care how much other stuff is in the recipe.

I can tell that this is low-carb, but is there a low-sodium alternative to the pork rinds? those things are so packed with salt that I can’t eat them anymore.

Recipe is great. Two questions: aren’t pork rinds too fat? Should I use 2 whole eggs or just egg whites? Overall recipe looks easy to cook, will definitely try. Thanks for sharing!
